Quick Zucchini Bread

ZUCCHINI QUICK BREAD


3 Eggs
1 Cup Oil
1 Teaspoon baking soda
½ Teaspoon baking powder
2 Cups grated zucchini
1 Cup chopped pecans (or walnuts)
2 Cups sugar
3 Cups flour
1 Teaspoon salt
2 Teaspoons cinnamon
3 Teaspoons vanilla



1. Preheat oven to 350° F

2. Grease and lightly flour three loaf pans

3. Cream eggs, sugar and oil. Sift flour, soda, salt, baking powder and cinnamon together and add to mixture.

4. Combine zucchini, vanilla and chopped pecans with mixture until smooth.

5. Bake in loaf pans for about 45 to 60 minutes.


Makes 3 large loaves.
